About Codorníu Gran Plus Ultra Pinot Noir

In classical times, before the concept of a spherical Earth was firmly established, many believed that the oceans faded into an abyss or that beyond certain boundaries lay nothing navigable or habitable. In this context, the phrase "Non Plus Ultra" served as a warning: "Here ends the known world; there is nothing beyond." However, with the advent of the Age of Discovery (15th and 16th centuries), this notion of a definitive limit began to crumble. Instead, "Plus Ultra" ("Further Beyond") became a symbol of the adventurous spirit that drove navigators to cross oceans and discover new continents, challenging established beliefs. Embracing this same pioneering spirit, Codorníu, one of Spain's most iconic and oldest wineries and a global benchmark in the production of cava in the Penedès (Catalonia), adopted the concept of "Plus Ultra" to christen a collection of cavas that transcend the conventional.

Codorníu Gran Plus Ultra Pinot Noir, the first cava in Spain crafted with the esteemed pinot noir variety, pays homage to this legacy of innovation and bravery. Vines sourced from 5 or 6 of its own vineyards, located in the most continental climate region of the DO Cava. After the harvest, the grapes are destemmed in the winery, allowing the must to macerate with the skins for about 3 or 4 hours. Fermentation is carried out at a constant temperature of 17°C. Following the blending, the wine is bottled along with the tirage liqueur for the second fermentation. Finally, it remains on the lees for a minimum of 12 months. Subsequently, it is disgorged, and a dosage of expedition liqueur is added to determine its brut dosage.
