About La Cruz Verde

La Cruz Verde is a red wine made with the Garnacha Tinta variety at the Bodega Soto y Manrique and classified as D.O.P Cebreros.

Soto y Manrique is a young winery that started out in 2012 as part of an old cooperative in Cebreros (Ávila), where wine had been made since 1954. The owner Jesús María Soto Esteban, together with his family and several partners, produces three lines of wine classified as D.O.P. Cebreros. Mountain wines from different vines where the terroir is most prominent.

The vines used to make La Cruz Verde red wine are both owned and leased, and are located within the rugged Gredos mountains (Ávila). They have an average age of between 60 and 70 years old and are planted at an altitude of 900 meters in granite sand and shale slate soils. The vineyard uses organic winemaking methods and the grapes are harvested in 25 kg boxes.

When the La Cruz Verde grape reaches the vineyard, it is cooled in chambers overnight. It is cold vatted and fermented at a controlled low temperature, undergoing light maceration and extraction. It is aged for 14 months in 10,000 litre foudres.

La Cruz Verde is a great example of how the Garnacha variety is shaped by each type of soil, in this case creating a wine that is fresh and light.
