La Viña de Ayer Garnacha is a red wine made by the Soto y Manrique winery in La Sierra de Gredos, V.T. Castilla y León.
After working in the wine industry since 1994, Jesús Mª Soto decided to start this family project in 2012. Soto y Manrique is a small winery that bears both his name and that of his wife. They work with their own vineyards, all of which where planted in 1990.
Since the very beginning, Jesús Mª's goal was to produce wines that demonstrated the character of the soils they come from. Limestone, granite and sandy soils that can give the maximum necessary freshness and elegance, and utmost respect for the variety.
The results are simple, direct, very fresh, varietal wines, with an excellent quality to price ratio.
La Viña de Ayer Garnacha is a wine made with Grenache grapes from old vineyards planted at an altitude of between 750 and 1070 meters on slate and granite sand soils and surrounded by pine forests.
The grapes are harvested by hand and placed in 25kg boxes. The grapes are cooled in cold rooms overnight. The grape is vatted cold and fermented at a low temperature with a light maceration and extraction. Malolactic fermentation and aging for 6 months takes place in 10,000 liter truncated cone tanks.
