About Bodega Cerrón La Servil

La Servil is an ecological, wood-aged red wine made by Bodega Cerrón with the Monastrell variety in the D.O. Jumilla, in the Murcia region. 
 
The Cerdán family has been cultivating vineyards since 1895 in Fuente-Álamo (Albaceta). This long relationship with the land that has passed from generation to generation led them to creating Bodegas Cerrón in 2004 with the aim of recovering forgotten vines and ancient working methods to produce wines that speak of the land. 
 
La Servil comes from vineyards lying 960 metres above sea level. These are old vines, aged 60-70 that are planted on limestone soils and cultivated according to ecological principles. The team use environmentally-friendly biodynamic practices and the harvest is carried out manually at the optimum point of ripeness. 
 
In the winery, the destemmed and crushed grapes undergo a light maceration. La Servil then spontaneously ferments with native yeasts in wooden conical vats. The wine then ages in 5000-litre foudres and used 500-litre barrels for 12 months. Finally, it is bottled without filtering or clarifying. 
 
Made by a new project with old roots, La Servil is a fruity red wine with a great mineral load. A fresh and smooth Mediterranean landscape in a bottle.
