About Pittacum la Prohibición
Pittacum La Prohibición is a D.O. Bierzo red wine by Bodegas Pittacum.
A single varietal Garnacha Tintorera. The grapes come from centenary vines that are farmed at a high density in steep hillsides requiring manual labour. No herbicides are used in their production, demonstrating this winery's total commitment to the environment.
The harvest takes place manually at peak ripeness and the grapes are transported to the winery in small 12 kg boxes to avoid breaking the clusters.
The grapes later pass through a cluster-by-cluster selection process and are crushed without being destemmed.
Fermentation takes place in small tanks for 12 days at 24-25ºC and batonages as well as light pump overs are applied. After fermentation, Pittacum La Prohibición macerates for 15 days before it is devatted and stored in 600 litre French oak barrels where it ages for 24 months. Not a single racking is applied until the wine is filtered and bottled.
Pittacum La Prohibición is a highly acidic red wine, allowing you to enjoy its fruitiness and freshness for years to come.
