The vineyard for
Silencio de Miros is called "Parcela Rafael". It is the most treasured vineyard in
Bodegas Peñafiel, located at almost 1,000 metres of altitude and situated in the "Golden Mile" of Ribera del Duero, named for the large number of major wineries based there. The harvest is usually carried out in mid-October, when the grapes are fully ripe, in 12 kg boxes to prevent the berries from breakings before being vinified.
Once in the winery the grapes for
Silence of Miro spend 48 hours in a cold room at less than 7 ºC to preserve and enhance the fruit aromas. They then go through the sorting table and are gently destemmed. Before beginning the fermentation, a cold maceration is also carried out in an inert atmosphere to extract and preserve the aromas. The alcoholic fermentation lasts 12 days and takes place at a controlled temperature of around 26 ºC, in frustoconical tanks. Lastly the malolactic fermentation is carried out in a barrel and the wine is aged until the winemaker considers it suitable. This makes it possible to find precisely the best balance and elegance in the final wine.
