About Yllera 5.5 Verdejo Frizzante

Yllera Verdejo 5.5 is a white wine without denomination of origin produced by Grupo Yllera. It is a single-variety wine made with Verdejo.

The grapes of Yllera Verdejo 5.5 are born from vineyards that are between 25 and 40 years old. The harvest takes place at night, when the temperatures are low, so that the grapes maintain their qualities.

First of all, a destemming process is performed at the winery. Then, a cold pre-fermentation maceration takes place to achieve the best possible extraction of aromas.

The grapes used for Yllera Verdejo 5.5 are gently pressed in a pneumatic lung press to obtain the must, which is preserved at low temperatures. This must partly ferments until it reaches 5.5 alcoholic strength.
This way, Yllera Verdejo 5.5 respects the acidity and the sweetness of the fruit, and it preserves the original CO2 from the fermentation. Before it is bottled, this wine is clarified and stabilised.
