Abadía Retuerta asserts that all their wines serve as the narrative thread of their history. Considering this statement, the red wine Abadía Retuerta Cuvée Palomar would represent stages of expertise, wisdom, and maturity: expertise from over five centuries of winemaking; wisdom in understanding and deciphering the needs of each plot; and maturity in being able to revive and enhance one of their historic wines (which ceased production in 2005). To rectify is wise. And knowing when to pause is too; but to return with more vigour than ever, just as Abadía Retuerta Cuvée Palomar did, which today stands as the crown jewel of this winery.
The identity of each vineyard and the awareness of the terroir are the two guiding principles of Abadía de Retuerta. This conviction—and its positive outcomes—has earned Abadía Retuerta its own DOP, the highest recognition in wine classification. At Abadía Retuerta, each of the 54 plots is entirely differentiated and identified, depending on its soil type, exposure, and altitude. This diversity is primarily due to the Duero River, which exerts its influence over the 180 hectares where garnacha, tempranillo, malbec, graciano, and some white varieties are cultivated. All these vineyards are situated in Sardón de Duero (Valladolid), in the narrowest basin formed by the Duero River as it passes through Valladolid. Right in that meander, at an altitude of 880 meters, lie the vines of Abadía de Retuerta, on limestone and marl soils.
At Abadía Retuerta, the harvest is conducted manually, meticulously selecting the grapes used to produce Abadía Retuerta Cuvée Palomar. All movements, rackings, and pump-overs—both of the must and the wine—are done by gravity, ensuring the wine's qualities remain intact. For over 25 years, fermentations have been carried out by plot, separately, using indigenous yeasts selected on-site. Similarly, Abadía Retuerta Cuvée Palomar will undergo spontaneous malolactic fermentation in barrels, awaiting tasting.
Once the cuvée profile is defined, following various tastings, it is time to perform the blending and prepare Abadía Retuerta Cuvée Palomar for aging in the underground cellars. Here, Abadía Retuerta Cuvée Palomar will rest for one to two years until it is ready to be bottled (after clarification with egg white), becoming a red wine "elegant and complex, with a special sensitivity."
