About Baigorri Reserva

In 2002, Jesús Baigorri embarked on his venture, establishing a winery in the village of Samaniego (nestled below the Sierra de Cantabria), with the aim of crafting wines that are truly unique and unparalleled. To bring this vision to life, he enlisted the expertise of Iñaki Aspiazu, an architect who designed the structure where this dream would be realised and where red wines such as Baigorri Reserva would be produced.

Baigorri Reserva is crafted from Tempranillo sourced from Las Navas, El Caño, Burdarán, Carrabaños, Carrasanvicente, Carranavaridas, Mojón, La Canoca, Murralavieja, La Pau, San Millán, and Languiz. These are all old vineyards, characterised by low yields, cultivated on clay-limestone soils in a sustainable manner, employing both traditional and modern methods that honour nature. This involves manual labour, including harvesting, to maximise environmental respect.

Baigorri Reserva undergoes destemming and crushing, followed by maceration prior to fermentation in stainless steel tanks. Subsequently, during the 12 months of barrel ageing, Baigorri Reserva also undergoes malolactic fermentation.

“A wine that possesses everything for today and a promising future,” they affirm at the winery. It will be intriguing to see if it lives up to the claim, won't it?
