About Borsao Cabriola

Borsao Cabriola is a barrel-aged red wine crafted from Syrah, Garnacha, and Mazuela varieties in the DO. Campo de Borja (Zaragoza), produced by Borsao.

Resulting from the merger of the three cooperatives of DO. Campo de Borja, Borsao is a venture situated in the town of Borja (Zaragoza). This area, known as "The Empire of Garnacha," boasts an extensive range of excellent wines that bring recognition and visibility to this small Aragonese denomination, whose logo features a horseman riding through the town of Borsao (the old name for Borja).

Borsao Cabriola is derived from old vines aged between 20 and 60 years, growing under the influence of the Moncayo massif and cultivated in a traditional manner. The harvest is conducted manually when the grapes reach their optimal ripeness.

In the winery, Borsao Cabriola first undergoes controlled maceration for 20-25 days. Then, fermentation begins in stainless steel tanks at a controlled temperature of 25-30°C. Finally, the wine is aged in oak barrels for one year.

The name of this wine is inspired by the cabriola, an acrobatic move performed by a horse, kicking out while suspended in the air. It is an exercise that requires perfect balance, much like the red wine Borsao Cabriola; power and freshness in harmony.
