Fiano, a typical variety of the province of Avellino, in southern Italy (Campania), lends its name to Feudi di San Gregorio Fiano di Avellino, a white wine made by the renowned Feudi di San Gregorio winery, fermented and aged on its lees in stainless steel tanks.
As the label shows, the grapes used to make it grow in this area (with a great winemaking tradition), where the vineyards are spread over the hills surrounding the town of Avellino at an altitude of between 400 and 700 metres above sea level. The soils, which are a mixture of volcanic and clay-limestone, are well drained, retaining large reserves of water. This will obviously be of great help to the vines, which struggle through the hot days and cold nights.
Feudi di San Gregorio Fiano di Avellino is harvested and processed in the winery, where the must is extracted at low pressures. After racking, where the juice rests overnight at low temperatures, Feudi di San Gregorio Fiano di Avellino is ready for fermentation in stainless steel tanks at a controlled temperature. As a general rule, this variety, which is considered one of the most elegant, is vinified in stainless steel tanks to preserve all the aromas and freshness. The same is true of the aging process, which takes place in the same tanks, where Feudi di San Gregorio Fiano di Avellino spends four months in contact with its lees.
