About Castro Ventosa Valtuille La Cova de La Raposa

In 1752, a progenitor of the familia Pérez made his final wishes unequivocally clear: “anyone who came to pay their respects would be welcomed with a glass of wine and a piece of bread produced at home.” This testament leaves no room for doubt about the significance this family has always placed on wine. Today, four centuries later —and under the name of Castro Ventosa— the Pérez lineage continues with this venerable tradition. Engaging in conversation and attempting to persuade Raúl Pérez (the winemaker), José, Meritxell, and Arturo, the current generation helming the family enterprise, would be necessary to achieve this. And we must forewarn you, it won't be a simple feat to be granted such a glass. It's not every day that someone offers a wine distinguished with over 90 Parker points, is it? In fact, La Cova de la Raposa was the first plot that Raúl Pérez vinified separately in 2013, marking the beginning of a new trajectory in which the wines would start to express the character of each area. Thus, Castro Ventosa Valtuille La Cova de La Raposa is one of the 400 plots that are part of the 95 hectares of the winery. What renders this environment so unique? Its centenarian vineyards, southern exposure, sandy soils, and the continental climate with Atlantic influence that are evident in this 0.2 hectares of the D.O. Bierzo, situated to the west of the province of León.

Castro Ventosa Valtuille La Cova de La Raposa ferments in open 500-liter barrels using indigenous yeasts, without temperature control. This step is followed by maceration, a pivotal process in Raúl Pérez's methodology, where on this occasion Castro Ventosa Valtuille La Cova de La Raposa will be in contact with the skins for approximately 40 days. During this period, it was crucial to submerge the cap (the layer of skins that forms on the top of the vat). This layer, which partly protects the wine, must be kept moist at all times; if not properly managed, it can foster the growth of undesirable bacteria and microorganisms that could spoil the wine. To prevent this, Raúl Pérez manually submerges these skins, ensuring they remain moist throughout. Finally, the 12 months of aging in used 500-liter barrels will be decisive.
