Located in Valtuille de Abajo, in the northwest of DO. Bierzo, lies the vineyard where El Castro de Valtuille Mencía Joven is born. The ancient mencía vines, over 85 years old, stretch across more than 300 plots, where clay, sandy, and organically rich soils abound. From the very beginning and throughout its entire process, El Castro de Valtuille Mencía Joven is cultivated by hand, adhering to traditional methods, preserving the same character with which it was crafted by Raúl Pérez. For years, the renowned winemaker led Castro Ventosa, his family's winery; however, despite his departure, the same passion and dedication that Raúl Pérez imparted continue to thrive. Despite being the youngest in the family, El Castro de Valtuille Mencía Joven exhibits remarkable character and strength.
After meticulous care and attention in cultivation, the time comes to reap the fruits of this labour. This will be done manually, during a harvest lasting approximately 25 days, with every effort made to keep the grape clusters in optimal condition. As soon as they arrive at the winery, following destemming, El Castro de Valtuille Mencía Joven is gravity-fed into large fermentation tanks, where indigenous yeasts will transform the must into wine. Throughout this process, the temperature will be monitored, and a daily pump-over will be conducted—lasting about 10 minutes—where the cap formed by the grape skins (which will float at the top of the tank) will be pushed to the bottom of the tank.
Finally, after the appropriate racking and pressing, El Castro de Valtuille Mencía Joven undergoes malolactic fermentation and is transferred to wooden foudres, where it will rest for a few months until bottling.
